Hi all,

I love this sindhi food by my mother in law when she cook for family dinner...it goes like this...wish I were there and cook it for all but least I can do is to share here the recipe for anyone to try it out.

CHICKEN IN TOMATO AND ONION PASTE

Ingredient:-

One whole chicken - cut into medium pcs
One kilo big red onion - chopped
One kilo tomato - just ripe- chopped
5 potato cut into small cubes
Big bunch of coriander leaf - chopped
3 pcs garlic - chopped
1/4 inch ginger - smashed
5 green chili - chopped
5 red chili - chopped
10 cashew nuts - chopped
2 table spoon of chicken curry masala
2 stick of cinnamon, 2 star anise(looks like a star*)
5 pcs cardamon
1 teaspoon small jeera


Cooking method :-

Marinate the chicken with salt and tumeric - 1/2 hour
while waiting for the chicken to marinate , prepare the rest of the ingredients. Now heat the wok and put in oil,once the oil is hot - put chopped chili -stir one min - put all the dried spices - stir one min - then put in onion and stir until light brown then add in the tomato
and cook for 10 mins until it turn to be a gravy and then put in the chicken plus +potato+ curry powder + salt+ 3/4 of the chopped coriander leaf and mix well -cook for 5 min add some water to how much you want the gravy to be.Then cook the chicken tender in a medium / small fire for 1/2 hour while in between stirring it every 5/10 min. Give it a taste for salt and spiciness’ you want it more spicy you can add more chili powder or chopped green chili.

Once the chicken is tender, gravy is thick , potato cooked and the smell makes you can't wait to eat....now wait for 1/2 hour for the chicken to be cooled and soaked in the gravy and then serve to eat ( just springkle some garam masala for the aroma). This is for you to enjoy eating the chicken in onion and tomato paste. Good to eat with plain briyani rice / jeera rice / plain rice / chapatti.
